Vegan Avocado Toast

Avocado and toast may seem like a stereotypical vegan dish, but it’s a simple classic that tastes delicious! When you’re in need of a quick, easy breakfast or brunch, you can always turn to avo on toast.

Prep time: 15 minutes



1 large slice of bread

1 large ripe avocado

Juice of 1 lemon

Extra virgin olive oil

Sprinkle of Japanese Nanami Togarashi or chilli flakes

Basil and tomatoes (to serve)


  • Make your toast.
  • While that is going on, squash the flesh of the avocado in a small bowl using a fork.  You don’t want this to be too smooth; a bit of texture is more satisfying.
  • Mix the lemon juice into the avocado to stop it from going brown.
  • As soon as the toast is ready, give it a quick drizzle of olive oil and then spread over the avocado.
  • Lastly, sprinkle with the Nanami Togarashi or chilli flakes, and serve with fresh tomatoes and basil.
