Butterbean mash

Try this unusual twist on a classic for a tasty high-protein alternative to mashed potato.

Ingredients

  1. 2 jars (not tins) butterbeans
  2. 1 garlic clove
  3. Juice of 1 lemon
  4. 1 teaspoon ground cumin
  5. 1 teaspoon light tahini
  6. 4 spring onion finely chopped
  7. 1 bunch chives, finely chopped

Method

  • Blend (using a hand blender) the beans, garlic, lemon juice, cumin and tahini till smooth. Add salt to taste
  • Pour into a serving dish
  • Scatter with spring onion and chives
