Carrot cake overnight oats

Super simple and versatile, say hello to this breakfast bowl of goodness! Bursting with essential vitamins such as Vitamin A, K and magnesium as well as protein and fibre, this is great on-the-go and for all the family.

Serves 2
Prep Time: 5 minutes (plus overnight time in fridge)


  • 1 carrot, grated
  • ½ cup of oats
  • 1 ¼ cup of Plenish Cashew M*lk (or similar)
  • 2 tablespoons of chia seeds
  • 2 tablespoons of pumpkin seeds
  • ¼ teaspoon of vanilla extract
  • A pinch of sea salt
  • Drizzle of agave syrup


Mix the carrot with the oats, vanilla, agave syrup, and milk together with a pinch of salt. Top with pumpkin seeds and chia seeds.

Leave in the fridge overnight and enjoy for breakfast over the next couple of days.

Top with a dollop of dairy free yoghurt and cashews.
