Fry’s Chicken Sweet Potato Waffle with Chilli Maple

Serves 3


1 pack Fry’s Chicken Style Strips
2 tbsp cornflour
A little oil for frying

For the waffle batter:
250 g sweet potato (or two sweet potatoes), cooked
2 tbsp baking powder
140 g oats
140 g plain flour
A pinch of salt
2 tsp ground cinnamon
240 ml plant milk
A little coconut oil for frying

For the maple chilli sauce:
4 tbsp maple syrup
1 tsp chilli flakes
A sprinkle of sea salt


  1. Combine all ingredients for the waffle batter in a blender until smooth. Heat and grease the waffle maker and make three large waffles from it.
  2. Coat the chicken style strips in a little cornflour and crispy fry them in hot oil in a non-stick frying pan.
  3. Combine the maple syrup with the chilli and a sprinkle of sea salt in a small jug.
  4. Serve the waffles hot, topped with the crispy chicken style strips and drizzle with the chilli maple sauce.
