This vegan Cowboy Caviar from our friends at Meatless Farm is a vibrant, protein-packed twist on the Tex-Mex classic. This easy dish works as a packed lunch, weeknight dinner or piled onto tortilla chips at a summer barbecue. With 23g of protein and 17g of fibre per serving, it’s sure to become a regular staple in your meal rotation!

Ingredients

For the cowboy caviar:
1 pack Meatless Farm Meat Free Mince
1 tbsp olive oil
1 red pepper, diced
1 cucumber, diced
1 can sweetcorn, drained
1 can black beans, drained and rinsed
1 can black-eyed beans (or black-eyed peas), drained and rinsed
2 ripe avocados, diced
Large handful fresh coriander, finely chopped

For the dressing:
4 tbsp extra virgin olive oil
Juice of 2 limes
1 tbsp red wine vinegar
1 tsp maple syrup
1 tsp garlic powder
1 tsp chilli flakes (or to taste)
Salt and black pepper

Method

1. Heat the olive oil in a frying pan over a medium-high heat. Add the Meatless Farm Meat Free Mince and cook for 5–7 minutes, breaking it up as it browns. Leave to cool slightly.

2. Meanwhile, add the diced red pepper, cucumber, sweetcorn, black beans and black-eyed beans to a large serving bowl.

3. Add the cooked mince, followed by the diced avocado and chopped coriander.

4. In a jar or small bowl, combine the olive oil, lime juice, red wine vinegar, garlic powder, chilli flakes and maple syrup and season with salt and pepper. Shake or whisk until combined.

5. Pour the dressing over the salad and gently toss until everything is evenly coated. Serve immediately with tortilla chips, spoon into tacos or wraps, or enjoy as a fresh summer salad.

Top tip: Chill for 20–30 minutes before serving to let the flavours develop. If making ahead, stir the avocado through just before serving to keep it fresh.
