½ onion, grated
1 tbsp paprika
1 tbsp cumin
Salt & pepper
Wooden skewers
Flatbreads:
4 flatbreads
Dressing:
½ lemon, juiced
½ cup plant-based yoghurt (such as Alpro Sugar Free)
1 tbsp chopped parsley
1 clove garlic, minced
For the Board:
Shredded lettuce & red cabbage
Cherry tomatoes, halved
Cucumber, diced
Cooked couscous
Hummus
Iceberg lettuce
Pickled red onions
Olives
Red onion, thinly sliced

1. Mix all kofta ingredients in a bowl.
2. Shape into sausage-like forms around wooden skewers.
3. Air-fry at 200°C (400°F) for 20 minutes, or until golden.
4. Fry the flatbreads on both sides.
5. Mix all dressing ingredients in a bowl.
6. Assemble all ingredients onto a serving board.
7. Load flatbreads with hummus, chosen toppings, koftas, and drizzle with dressing.
8. Enjoy!
