Vegan Blueberry Cake

Ingredients

  1. Dry ingredients:
  2. 200g (1 1/2 cups) self-raising flour
  3. 110g (1/2 cup) brown sugar
  4. 1 tsp baking powder
  5. Wet ingredients:
  6. 150ml (2/3 cup) dairy-free milk
  7. 75ml (1/3 cup) sunflower oil
  8. 2 tsp vanilla essence
  9. 1 tbsp apple cider vinegar
  10. Other ingredients:
  11. 200G (1 1/3 cups) blueberries
  12. Vegan butter to grease the baking tin
  13. Baking paper

This is the easiest ever vegan blueberry cake! But don’t let that fool you – it’s also amazing!

Cooking Time: 35 minutes
Serves: 6

Preparation

  1. Preheat your oven to 180C (360F).
  2. Mix together all dry ingredients in a large bowl. Make sure that there are no lumps. If you don’t have self-raising flour then just use normal flour and add 2 tsp baking powder instead of just 1.
  3. The mix together all wet ingredients in a separate bowl.
  4. Combine the dry and wet ingredients and mix well until you get a smooth batter (with no lumps).
  5. Then carefully fold in the blueberries.
  6. Line a baking tin with baking paper and grease the sides with vegan butter.
  7. Pour the batter into the baking tin and even it out with a spatula.
  8. Bake for 35 min.
  9. Take out of the oven and let cool down thoroughly. Then sprinkle icing sugar on top.
