Traditionally made using off-cuts of pastry, these vegan jam tarts are cheap and easy to make and provide a little glimpse into what passed for treats back in the day. Simple as they are, they still bring a smile to the face.
1. Cut 12 discs from your pastry with cutters and place these into the dips of a fairy cake tin. Add 1 teaspoon of jam to each.
2. Cook for 15-20 minutes until the jam is bubbling and the pastry is cooked.
3. Remove from the oven and let them cool on a wire rack. Careful! That jam will be HOT!
