A vegan twist on the legendary “marry me chicken”: crispy tofu in a rich Tuscan cream sauce with sundried tomatoes, garlic and basil, served with rice or pasta. The recipe makes 2 generous, filling servings, or 3 moderate ones. Marinate the tofu the day before if you can; it makes all the difference.

Preparation

  1. If your firm tofu comes packed in water, freeze it overnight and thaw it, which lets out the liquid and gives a meatier texture. With extra-firm tofu, just pat it dry.
  2. Tear the tofu into bite-size pieces.
  3. Whisk the olive oil, soy sauce, grated garlic, oregano, both paprikas, nutritional yeast, sriracha, water and vinegar into a marinade.
  4. Pour the marinade over the tofu.
  5. Marinate for at least 1 hour, ideally 24.

Method

  1. Cook the rice or pasta according to packet instructions.
  2. Toss the marinated tofu with the cornflour until well coated.
  3. Fry the tofu until crispy, then set aside.
  4. Sauté the garlic in the oil over low to medium heat for 1 to 2 minutes, until fragrant.
  5. Add the sundried tomatoes, oregano, thyme and chilli, and sauté for another minute.
  6. Pour in the stock and the cream and bring to a boil.
  7. Stir in the nutritional yeast, season with salt and simmer for 5 minutes on low heat.
  8. Fold in the fried tofu, the lemon slices and plenty of chopped basil.
  9. Serve with the rice or pasta, topped with fresh basil.
