This is a great dish for Vegans and Vegetarians too. The Ponzu dressing isn’t totally authentic (one needs some rather rarified Japanese Citrus for that) but it’s a great one to use for salads.

Method

Firstly, make the dressing by mixing the soy, ginger, sesame oil, lemon and mandarin juice together in a little saucepan and bring it to the boil. Simmer for 5 minutes, take off the heat and add the zest of mandarin

Heat up a little more sesame oil, add three sliced spring onions (retaining one for garnish), and once softened add the Merchant Gourmet Korean Grains until warmed through. Serve between two plates.

Next, take the tofu carefully out of the packet and roll in the sesame seeds. Cut the tofu into four slices and arrange between the two plates.

To serve, simply drizzle with with the Ponzu Dressing and sprinkle over some extra spring onions
