A bowl of tomatillo salsa

A zingy kick to any spread!


  1. 400g Tomatillos
  2. 1 Small red onion
  3. 1 Lime
  4. 1tsp Soft brown sugar
  5. Bunch of coriander


Makes 1 medium sized jar.


  • Soak the tomatillos in a bowl of warm water for 10 minutes to remove the sticky layer from them.
  • Finely dice the onion and place into a small bowl. Put the lime zest, juice and sugar into the bowl with the onions. This will soften them.
  • Put the washed tomatillos into a food processer and pulse until roughly chopped.
  • Roughly chop the coriander, then put all the ingredients into a bowl and mix.
