1 cinnamon stick
1 large onion, chopped into small pieces

Your favourite curry just got even tastier thanks to this vegan chicken madras recipe by Love Seitan. Fragrant, rich and absolutely delicious, this easy one-pot dish is a guaranteed hit.

  1. In a large frying pan, heat up some oil and fry your seitan chyck’n until crispy. Remove and put to one side and add a little more oil to your pan.
  2. Add in your cardamom pods, cinnamon stick and cumin seeds and warm through. This will release the flavours of the spices and take this curry to the next level.
  3. Then add in the large chopped onion and fry for 5 minutes, followed by the garlic and ginger. Leave to fry on a medium heat for 1 minute.
  4. Add your tomato puree, salt, turmeric, chilli and curry powder. Heat through to start cooking the spices and pour in your water, stir and add back in the chyck’n.
  5. Put the lid on the pan and simmer for 20 minutes.
  6. Stir in some chopped fresh coriander and serve with rice and naan. Enjoy!
