Low Sugar Raspberry Chia Jam
If you have lots of raspberries you need to use up try this fabulous, healthy jam recipe. Chia seeds are a great way to thicken berry jams. When making fruit jam with chia seeds, the seeds do all the work. Instead of cooking fruit down, relying on pectin, and then tons of sugar to help it set, all we need to do is mash up the fruit over a low heat with a few tablespoons of chia seeds.

Courgette and Carrot Spaghetti with Red Pepper and Tomato Sauce
This is a great recipe which can be adapted for other vegetables too. I also use the cheese and sauce to make a raw lasagne with long strips of courgettes in layers. I love using my Lurch Spiraliser for this recipe but if you don’t have one you can use a swivel peeler instead.

Waldorf Salad
This is such a simple salad – rich and creamy and perfect for summer salad days. I also find this is a big hit with children too. The combination of sweet apples and grapes with a nut dressing and crunchy celery plus plenty of greens makes this a hearty filling option.

Low Sugar Sweet and Sour Sauce
This recipe is very popular with clients and my own children. You can easily ditch the syrups and juice in sauces, and maximise the flavour with tangy rice vinegar, rich tomato paste and plenty of spices. Adding a few chunks of pineapple provides a wonderful texture and natural sweetness without the need to resort to added syrups. If you need a little extra sweetness you can add a little xylitol or pinch of stevia but as the pineapple is sweet you may find you don’t need it.

One-Pot Linguine with Olives, Capers and Sun-Dried Tomatoes
When I first heard about one-pot pasta – cooking both the pasta and sauce in the same pot at the same time – I was dubious. Then I tried it and the results were incredible. The pasta was indeed cooked through properly and infused with all the flavours of the sauce, and the sauce itself was rich and glossy, thickened by the starch from the cooking pasta, and totally delicious.

Lemon Sesame Seed Protein Balls
Energy balls are a fantastic way to get a quick hit of energy, whether it be to get through a meeting at work, keep you going in between classes or to see you through that challenging 1am – 2am phase of a Netflix marathon when you’re just so close to the end of the series, but your energy levels are dropping. The pistachio and seeds add texture and depth to the recipe and the very subtle zest from the lemon brings it all together.
I added Pulsin’ Organic Sunflower Protein Powder to these energy balls to give them a good ol’ protein boost. The wonderful thing about this protein powder is that it is vegan, soya free, non-GMO, gluten free AND has 45% protein – meaning a little goes a long way.
